Down a narrow, hidden alley in Bangkok’s Chinatown, a vendor tosses a supersized wok set over sparking coals.

It’s filled with kuaytiaw khua kai, or wide rice noodles with chicken and egg, cooked in lard. Frenetic scenes like this one at Nay Hong are repeated often throughout the city’s older streets, but this outtake from photographing Andy Ricker’s new cookbook Pok Pok Noodles was a personal favorite.
