With its nutrient-rich volcanic soil and location in the middle of biodiverse ocean waters, Bali has long enjoyed access to peerless produce and seafood. For generations, locals have cultivated the rice that makes up the core of the Indonesian diet in Ubud’s striking, emerald padi fields. Inspired by a sense of gratitude for the island’s natural abundance, chef Mandif Warokka chose to highlight these exceptional ingredients on an innovative menu. 

Rather than rely on poultry, pork or beef at Padi, a stylish eatery at Desa Visesa Ubud, the chef channels his impressive culinary chops into making vegetarian and pescatarian dishes shine. Despite the lack of meat, plates like butter-poached Bay Rock lobster or sugar-crusted organic beet with beet tartare, beet oil, cultured cream, and dill feel utterly indulgent. These sumptuous chef-driven pescatarian items highlight both his skill and the island's incredible seafood and shellfish.

Guests can opt for either the full chef’s degustation or a vegetarian-only tasting menu with options such as caramelized cauliflower risotto with mushroom powder and pickled onions or sweet corn-filled agnolotti with leeks and popped corn.
