An upmarket favorite, Californian chef–proprietor Geoffrey Deetz is fanatical about making everything for his innovative takes on banh mi from scratch, from the baguettes to the cognac-laced pâté to the sausages. Two standouts are the banh mi with lamb meatballs with pâté (VND79,000) dressed in a Malay curry sauce and the Saigon (VND79,000), which combines pork with pâté and lime mayonnaise.
