The Thai blue swimmer crab adds a local touch, but most dishes are plays on Italian classics, such as rich pan-seared foie gras balanced on a shallot risotto and topped with white truffle oil.
Some signature mains are prepared tableside, with a theatrical flourish; the Australian Wagyu beef tenderloin is flambéed in Martell cognac.
