Sorn Chai, a tiny four-table shop opposite Chiang Mai’s Tha Pae Gate, delivers a complex, tingly laab khua (Northern Thai–style minced meat) that’s perfect eaten with a nob of sticky rice and a few leaves of fresh mint. In business for over 30 years, this family-run place also serves a mean dtam mamuang (green-mango salad), but beware: order it pet (spicy) and your tongue will be begging for mercy.
