The Overview

It's not often that a young chef with barely any restaurant experience decides to go all-out and open one of the most ambitious dining spots in a city. That doesn't seem to have hindered Zra Jiraratana, the talented young chef who has been mixing the European fine dining he learned in culinary school with understated Thai influences. The tasting menus here rotate regularly, and might include Wagyu beef that's been slow-cooked sous vide, hay-smoked and seared, or exceptionally fatty tuna with seaweed pesto, or a snow-white sliver of fish in a rich curry sauce. Molecular-gastro touches abound, but are balanced by top-tier ingredients and a precise attention to detail. In other words, there might be a tuft of foam on your scallop, but it will rest upon a simple, perfect, three-year-aged shard of Iberian ham. It's all served in an industrial space covered with creepers, giving the curious impression of a beautifully decaying construction site. The prices here are steep, but it's worth it to see an inventive, very passionate individual let his culinary imagination run wild. And if some of the frills feel unnecessary, rest assured that the restaurant also pays attention to the basics. Case in point: the homemade bread and butter, both of which are exceptionally good and free of gimmicks.
