Once upon a time in Bangkok, it was possible to order only two versions of Thai dishes. The first came from street stalls or humble mom-and-pop shops but had wonderfully true flavors. The second was to be found in fancy malls or hotels, but was toned down for visiting Western tastes. Those days are long over, evidenced by places like EAT (Eat All Thai), a spin-off of the popular Supanniga Eating Room, where patrons devour dishes like crab curry with chaplu leaves or shrimp chili paste with mackerel and sour mango.
