From the sumptuous, wood-roasted meats to the silky handmade pastas, this is rustic Roman cooking at its very best. Chef Paolo Vitaletti flew his mother in from the Eternal City to make sure the gnocchi were up to scratch, and the attention to detail shows. The chicken liver pâté tastes as rich as foie; the lamb shoulder ragú puts your average "Bolognese" to shame; and the porchetta, liver-stuffed, rosemary-perfumed, and shatteringly-crisp skinned, is a thing of beauty. Despite the quality of the cuisine, there isn't a whiff of pretension here—the décor is cozy, never kitsch, and the vibe is warm and friendly. As a bonus, it's also one of the better places in town for a proper apperitivo. Early in the evening, well-heeled ladies and gentlemen can be seen sipping spritzes and nibbling on charcuterie with house-made pickles.
