The Overview

Korean-born chef Akira Back has made a name for himself from Bangkok to Dubai showcasing the kind of artfully presented, Japanese-inspired cuisine that would have made his teacher, the one and only Nobu Matsuhisa, proud. Dosa is his first culinary foray into both his native cuisine and country, a challenge he clearly relishes. Dishes range from bo-ssam (braised pork) cooked at 52 degrees Celsius for exactly 48 minutes, then served with shards of roasted fennel, to briny, addictive sea pineapple fried rice. Plates come steeped in nostalgia and are clearly a very personal labor of love.
