Husband-and-wife duo Chronos and Eunice Chan churn out palate-pleasing flavors like Horlicks and Sarsi Vanilla as well as more experimental varieties—Collagen; Wasabi lime—with a new addition every month. To date, the shop counts more than 80 flavors in its repertoire, though only 18 are sold at any one time. Despite not using stablizers, Tom’s Palette’s ice creams are surprisingly dense with a gelato-like texture and a smooth, velvety consistency.
