Canadian Frédéric Dionne-Vachon pioneered upscale modern French fare in the Lao capital, opening up Le Silapa more than a decade ago in a charming colonial period house with an Art Deco bar area downstairs. With chef Anthony Dewald at the helm, the Vientiane institution still serves up delicately presented delectables to a devoted clientele of locals and regular visitors. Look out for the seared tuna with shitake mushrooms, or grilled duck on a bed of vegetables tartare, with grilled anchovies and pesto.
