With its sweeping views of Victoria Harbour, it’s a suitably grand showcase for the world’s youngest Chinese chef to hold three Michelin stars, Albert Au Kwok Keung. He brings a noticeable finesse to haute Chinese dishes such as glazed chicken liver and pork belly skewers and red wine-flavored goose liver terrine.
