Following in the grand northern Spanish tradition of asador, meat here is seared over blazing hot wood or coals for optimum char. Executive chef Alfredo Rodríguez prepares classics from his homeland like txuleta, a Rubia Gallega rib-eye, and rodaballo la brasa, a wild turbot cooked whole in a metal casing, with passion and precision.
