First-class dining landed in Beijing’s Sanlitun district with the arrival of Bei in the basement of The Opposite House, one of Beijing’s flashiest boutique hotels. Max Levy, who hails from New Orleans and worked at New York’s Sushi Yasuda, serves up North Asian–inspired cuisine in a black-and-purple dining room decorated with whimsical flying light bulbs. At the bar, enjoy sumptuous cuts of raw seafood, like Levy’s steelhead ocean trout with a tiny dollop of shiso paste or scallops flavored with salted lemon peel. But also save room for the main menu, which features delicious dishes such as poached foie gras paired with a fillet of sweet grilled eel.
